Holiday time for those with certain dietary restrictions can be a bust! Especially when you look over on the dessert table. Being Gluten and Dairy Free has had its challenges, but I love a challenge! I love showing people that I can get the same acquired taste that are in most desserts. I promise this recipe right here will be joy to your heart! The first time I tried it I was blown away by the rich and creamy texture of the pie.

Key Lime Cheesecake Gluten and Dairy Free
Crust
1 pre made crust by Mi-Del
1/2 Tablespoon of Earth’s Balance vegan butter
Pie
3 large or extra large eggs
1, 11.25 ounce can sweetened condensed coconut milk {recommended: Nature’s Charm}
3 pkgs of Dairy-free Cream Cheese
1 tbsp of cornstarch
2/3 cup fresh key lime juice {approximately 12 Key limes}
2 teaspoons grated lime peel, green portion only
Whipping Cream For Garnish {optional}
I purchased So Delicious coconut whip cream
Instructions
- Combine graham cracker crumbs from pre-made pie crust with vegan butter. Press into bottom and partially up sides of 9 inch spring-form pan. Refrigerate.
- In a large bowl, beat with an electric mixer the cream cheese, sweetened condensed milk, lime peel, and cornstarch until smooth and fluffy. Beat in eggs one at a time, blending just until smooth. Add key lime juice with mixer on low. Finish mixing by hand. Do not over beat, or cake will crack during baking. Pour batter into prepared crust.
- Bake at 300 degrees for 55 to 65 minutes, or until set. To minimize cracking, place a shallow pan half full of hot water on lower rack during baking.
- Turn oven off, and let cheesecake stand in oven 30 minutes with the door open at least 4 inches. Remove from oven. Refrigerate cake overnight, and up to three days.
Serving
If you are using the whipping cream garnish. Serve with a dollop of whipped cream.
