It’s summer vacation, and that means more time spent with your kiddos. Summertime for a stay-at-home-mom means finding several activities to keep your kiddos learning and enjoying their summer vacation. For me and the Ollie Crew, we enjoy cooking to help fill our day. So, when I decided to put together this recipe, I knew the boys would enjoy it. This recipe turned out amazing! And if you have been following me here on GCMB, then you know I am a gluten and diary-free mama.
This recipe was actually inspired by a few recipes I found online. Making this recipe took me right back to the first time I tasted fruit pizza in high school. The sweetness from the cookie and the fruits {strawberries, kiwi, and blueberries}, mixed with the tartness from the cream cheese frosting hidden underneath was simply delicious.
Gathering the Ingredients
I visited my local Kroger to gather things I didn’t already have on hand. You will need:
Fruit:
1 carton of strawberries
1 carton of blueberries
3 kiwi
Other Ingredients:
Full fat coconut milk
Coconut oil
Sugar
Powdered sugar
Coconut flour
White rice flour
Vanilla extract
Potato starch
Baking powder
Baking soda
So, for the sugar cookie bottom representing the pizza crust, I followed a recipe I found on Pinterest that I loved so much. I promise this will be one of thee best dairy-free, gluten-free sugar cookies you’ll ever have. Here’s the link and instructions below:

Measurements:
1 cup sugar
1/2 cup coconut oil (or butter)
1/3 cup coconut milk (I actually used rice since I didn’t have any more coconut. Almond, soy, or even regular milk would probably be fine too)
2 teaspoons vanilla
3/4 cup white rice flour
1/3 cup coconut flour (or another 3/4 cup more rice flour)
2 tablespoons potato starch
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Instructions:
Mix together the sugar and coconut oil. Add the milk and vanilla then mix until well combined. Mix together the dry ingredients and add to the rest. The batter will be moist and fluffy.
Allow to sit on the counter for a few minutes while you preheat the oven to 350ºF.
Roll out the dough in one big circle {mimicking a pizza crust}. Bake for about 10 minutes or until desired browning is reached. Cool before frosting.
Coconut Frosting:
1/4 cup coconut oil
1 teaspoon vanilla
3 1/4 cups powdered sugar
6 tablespoons full fat coconut milk
1 tsp lemon extract
Mix these ingredients together to create the pizza sauce/frosting. I added 1 tsp of lemon to mimic the tart flavor of cream cheese. This decision turned out awesome! After the cookie cools, add frosting to the top of cookie and then add your toppings! It’s that easy and my boys loved it – another win for this mama!
