My husband and oldest are peanut butter obsessed! Peanut butter flavored everything is in order in my household. So, having quick, on-the-go, peanut butter snacks that are healthy and make my family happy are a no-brainer. This recipe is easy, delicious, and an awesome, no-bake snack.
All you need for this recipe is cooked {and cooled} quinoa, peanut butter, honey, semi-sweet chocolate chips and a big bowl! That’s it. Nothing fancy. Just straight-forward yum!
To get started…
Gather up your ingredients, put them all into a large mixing bowl, and combine them until everything is mixed and sticky.
Here comes the messy part. A great time to get the kids involved in helping!
Form the bites…
Roll the mixture into 1-inch bites. We use a mini muffin tin to hold the bites as we form them simply because it’s a good way to help our bites stay a consistent size and it’s easier to transfer them to the freezer for the next step.
Let them set…
Next, let the bites set in the freezer for 10 to 15 minutes to help firm them up a bit.
Enjoy!
Once they are firm they are ready to eat!

If you want to save them for later you can store them in an airtight container in the refrigerator for about a week {but they won’t last that long because they are so flipping delicious!}.
