Strawberry Cream Cheese Pie Drizzled with Chocolate, have you had it?

I can still remember it. I’m about 7-years-old and it’s my grade school’s annual craft fair. My mom has agreed to make pies for the bake sale. As we carry them into the school gym, we don’t even make it to the bake sale table before they are sold.

Why? Because they are that good!

I know what you’re asking yourself. What kind of pie could literally stop people in their tracks? Turns out it’s a strawberry cream cheese pie drizzled with chocolate!

Strawberry Cream Cheese Pie Drizzled with ChocolateThis pie is one of my favorites. I tend to ask for it instead of birthday cake. Luckily I have a June birthday and strawberries are in season so it’s the perfect summer treat.

If you’re thinking, “who would want to bake during the hot summer months?” just hear me out. The pie is easy to make, it only requires a few ingredients, and your oven is only on long enough to brown up the pie crust.

Strawberry Cream Cheese Pie Drizzled with ChocolateFull disclosure, this recipe is from Pillsbury. In fact, my mom still has a copy of the recipe circa 1990 {yes the pie recipe is almost as old as me}!

Ingredients:

  • Frozen pie crust
  • 8 oz package of cream cheese {softened}
  • 1/3 cup sugar
  • 1/3 teaspoon almond extract
  • 1 cup whipped cream
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon shortening
  • 4 cups fresh strawberries {washed and hulled, try LOCAL with our guide HERE!}

Directions:

  1. Heat oven to 450 degrees. Place prepared crust in dish.
  2. Generously prick crust with fork.
  3. Bake for 10 minutes or until lightly browned. Let cool.
  4. In a large bowl beat cream cheese until fluffy. Then gradually add sugar and almond extract. Make sure these are mixed well. Fold in whipped cream. Spoon mixture into pie crust.
  5. Arrange strawberries pointed side up over filling and chill.
  6. In a small double broiler sauce pan melt chocolate chips and shortening over low heat. Stir constantly until smooth. Use spoon to drizzle chocolate over the strawberry. Chill and keep in the refrigerator.

* Another option is to dip the strawberries in chocolate and let cool prior to placing them on the pie.
