Fall has finally arrived in Michigan! Better late than never, I suppose! I want to share with you this super easy and delicious fall recipe. My kids and everyone that I know that has tried them, demolish these muffins every time I make them.
These pumpkin cake mix muffins are so, so, so, so easy to make and perfect for any occasion.
Pumpkin Cake Mix Muffins
Ingredients::
1 box Cake Mix (any flavor!! We love Spice Cake, Butter Yellow, and Chocolate)
1 small can of 100% Pumpkin (NOT pumpkin pie mix)
1/2 bag of mini chocolate chips
Splash of milk
Directions::
Preheat oven to 350 degrees.
Mix all ingredients together.
Spray tins with nonstick cooking spray.
Place in muffin tins.
Bake for 18-20 mins for regular muffins.
Bake for 10-11 minutes for mini muffins.
Tips::
- I like to let them cool then store them in the refrigerator. They stay fresh at least a week in the fridge!
- You can also double the recipe and use 2 cake mixes and a large can of pumpkin.
- I would imagine that you could easily swap out a regular cake mix with a gluten-free option, and swap the milk for any other milk of choice. I will sometimes use the Enjoy Life {dairy-free} chocolate chips in place of regular chocolate chips!
- You can also make them into cookies or bake it like a cake and top with whipped cream for a super easy dessert.
My kids love to have these muffins for a snack and I honestly don’t feel terrible giving them to them for breakfast either 🙂
