A One Week Healthy Meal Plan + Grocery Shopping List

Today, I’m sharing a one week meal plan filled with healthy meals! The breakfast and dinner ideas are family focused and the lunch ideas are there to nourish Mom. The menu focuses on whole food meals meant to feed you and your family with healthy ingredients.

meal planIf you want a week of healthy meals, meal prepping is essential to keep things simple. The menu includes recipes from my favorite cookbook- Love Real Food. Other recipes are “do it your way” and some come from Mid Michigan Moms Blog Pinterest Page. Your meal prep tasks are explained throughout the week. I’m a fan of leftovers so if you see the same meal twice be sure to prepare enough food for leftovers!

Sunday: Grocery Shopping + Meal Prep Day 

Meal Prep: 
1. Prepare + jar overnight oats for Monday and Tuesday
2. Meal prep ingredients for Black Bean Burrito Bowls
3. Chop vegetables for Best Vegetable Lasanga
4. Prepare 2 Chicken Salad Mason Jar Salads + store for Tuesday, Thursday

Monday: Blueberry Overnight Oats, Black Bean Burrito Bowls + Best Vegetable Lasagna

Breakfast- Blueberry Overnight Oats
Lunch- Black Bean Burrito Bowls
Dinner- Best Vegetable Lasagna

Tuesday: Strawberry Overnight Oats, Chicken Salad Mason Jar Salad, Best Vegetable Lasagna Leftovers + Meal Prep Pancakes

Breakfast- Strawberry Overnight Oats
Lunch- Chicken Salad Mason Jar Salad
Dinner- Best Vegetable Lasagna leftovers

Meal Prep:
1. Tonight, make some Birch Bender Pancakes for you and the family to cover breakfast for Wednesday and Thursday. Store them in a glass container or Stasher Bags if you have some. If you have a favorite pancake recipe make those and scratch the Birch Bender Pancakes off your grocery list.
2. Slice + store strawberries for Pancakes

Wednesday: Pancakes with Fruit, Black Bean Burrito Bowl Leftovers + Spaghetti Squash Pizza Bowls

Breakfast- pancakes + a side of fruit
Lunch- Black Bean Burrito Bowl leftovers
Dinner-  Spaghetti Squash Pizza Bowls

Meal Prep: 
1. Chop + store veggies for Thursday’s dinner side of Spring Veggie Stir Fry
2. Prepare + store rice for Friday’s lunch

Thursday: Pancakes, Chicken Salad Mason Jar Salad + Hamburgers with a side of Spring Veggies

Breakfast- pancakes + a side of fruit
Lunch- Chicken Salad Mason Jar Salad
Dinner- Hamburgers (grilled and topped how you like them) + Spring Veggie Stir-Fry

Meal Prep:
1. Make marinara sauce for Friday’s dinner (you can use your choice of jarred marinara sauce if desired).

Friday: Eggs and Yogurt Parfait, Spring Veggie Stir Fry Leftovers over Rice + Hearty Spaghetti with Lentils and Marinara Sauce

Breakfast- Eggs (made how you like them) + yogurt parfait (yogurt, fruit, granola)
Lunch- Spring Veggie Stir-Fry leftovers over rice
Dinner- Hearty Spaghetti with Lentils and Marinara Sauce

Saturday: Simple Breakfast Quesadillas, Hearty Spaghetti Leftovers + Creamy Chicken Pot Pie Soup with a Grilled Cheese

Breakfast- Simple Breakfast Quesadillas 
Lunch- Hearty Spaghetti with Lentils leftovers
Dinner- Creamy Chicken Pot Pie Soup + Grilled Cheese Sandwich (made how you like it)
